One of the best things about the holiday season? All of the delicious baked good. Cookies, brownies and pies, oh my! To celebrate the tastiest season of the year, I’ve teamed up with a bunch of fabulous bloggers for a virtual cookie swap. Major props to Jenna of Boston Chic Party for arranging! And while I’m bending the rules a bit, I’m swapping these Creme de Menthe brownies.
According to google, these brownies are also called grasshopper brownies. The things you learn. While this recipe isn’t a family recipe, it is a family favorite. Our grandma got the recipe from a friend and we’ve all loved them since the first time she baked them. They aren’t hard to make, but there time consuming as there are three different layers and you must cool each layer completely before adding the next. I hope you enjoy them as much as we do!
Ingredients
- Brownie layer (bottom)
- 1/2 cup butter (melted)
- 1 cup sugar
- 4 eggs
- 1 cup flour
- 1/2 tsp salt
- 1 tsp vanilla
- 1 can (16oz) Hershey’s syrup
- Cream layer (middle)
- 1/2 cup butter (room temperate)
- 2 cups powdered sugar
- 4-5 TBSP creme de menthe
- Chocolate layer (top)
- 12 oz semi-sweet chocolate chips
- 1/2 cup butter
- 1 tsp peppermint extract
Instructions
- Brownie layer (bottom)
- Preheat oven to 350 Fahrenheit
- Mix all ingredients together, adding eggs 1 at a time
- Spread batter into a greased 13×9 pan
- Bake in oven until cooked through (about 20 minutes)
- Chill completely (ideally over night)
- Cream layer (middle)
- Beat butter and sugar until completely whipped
- Add in creme de menthe, 1 TBSP at a time and continue to beat
- Spread over brownie layer and chill until firm
- Chocolate layer (top)
- Melt chocolate chips and butter together, mixing until combined
- Add peppermint extract and stir together
- Spread over chilled cream layer
- Chill until chocolate is semi-firm and cut into squares
- Continue chilling until top layer is completely firm
